So some things that I want to include on future posts:
- Recollection of interesting things that happen to me now and then.
- Pictures of food and descriptions of how much I enjoyed them from my eating out experiences.
- Pictures of food that I get to make (if I get to make any) and recipes. Or just recipes that I find online that look delicious and easy to make.
- My bitter complaints about the world once in a while
- Travel pictures and fun things I do
- Occasional squirrel pictures because they are just adorable
- Exciting news that I have to announce to the internet and possible strangers
- Me wavering on what I want to do with my life and mostly what I don't want to do, because there are a lot more of those!
But seeing how it is Christmas, and of course you have to eat well on a holiday. And since brunch is my favorite, I want to share a recipe from. well of course. Giada! You can find the original recipe on Food network, but I'll just tell you my take when I made it. Enjoy! Munch away.
Mini Frittatas
Ingredients
- Nonstick vegetable oil cooking spray
- 8 large eggs
- 1/2 cup whole milk
- 1/2 teaspoon freshly ground black pepper
- 4 ounces thinly sliced prosciutto, chopped
- 1/3 cup freshly grated Parmesan(or any cheese that melts well, such as white cheddar)
- 2 tablespoons chopped fresh Italian parsley leaves
- 3/4 chopped tomatoes, strain the liquid, so it's not too runny.
- left out salt because the cheese and prosciutto bring enough salt.
- Some hot sauce or red pepper flakes if you want to kick it up a bit.
Directions
Preheat the oven to 375 degrees F.
Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper in a large bowl to blend well. Stir in the prosciutto, cheese,tomatoes and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.
Perfect for finger food and good to eat cold too!
